When i bought my V65 Sabre the manual listed 86 octane minimum by the R+M/2. I was surprised on a 10:1 compression engine. I filled that beast up with 87 octane gas. It sounded like someone was dropping ball bearings on a metal plate. Drained and filled with premium.

I tried running 89.5 octane in my KLR. Once warmed up, it would ping terrible on acceleration or load. With 93 octane, it only pings lightly during hard, low rpm acceleration, and only if temp guage is past the 1/2 way mark.

With these two experiences, I have to assume that the higher number
in those charts is the one to go by.

I don't think that is exactly correct. There are two methods of
calculating octane- research (R) & motor (M). In the US, most
stations rate the octane as the average of the two (R+M/2).

At sea level, you need more octane for the same performance (so
Regular is typically 87) and at higher altitudes (Colorado) Regular
 is 85.

I believe that 87 minimum is recommended using the R+M/2 method.
Mine runs much better with premium (93) (less knocking- I live at
sea level) and since I am buying so little at a time, price
 difference is not significant.
