That is the proper procedure although I usually have the seat and tank off when I pull the carb. Spray the rubber boots with WD40 and work it in between the carb metal inlet / outlet and the rubber. The airbox side rubber is more pliable and will be the end first out and last in but it ain't easy.
Why take the carb out? You can drain the old gas out of the bowl with an Allen wrench. You can pull the gas line off of the tank and inject some SeaFoam carb cleaner / fuel treatment down the line into the carb and let it set for a while to clean things out. Other problems?
