Is anybody getting over 60 mpg. out on the road?
If so, what modifications if any have you made?

Going up a tooth on the countershaft won't in itself make a bit of difference to your gas consumption if you continue to ride normally. Keeping your road speed below 50 mph will make a lot of difference.
