I have a '01 that now has about 33,000 miles on it so I have had a chance to check the mileage under different circumstances. I run street tires at 30 psi (Pirelli MT90 ST) 15/38 gearing, use Mobil 1 15w50. On my commute to work (75 miles round trip) I get around 48 mpg. On long highway passages at 70 mph true I might make 52 mpg. I have stock main jet and a couple of washers under the needle with the pilot air out to 2 1/2.
Are you letting the bike set long periods between rides? Could fuel evaporation be an issue? Have you checked the accuracy of your odo. My mileage numbers are based on data from my Sigma which seems to be within 1% on speed and distance.
