three knotheads

So here's the deal. Three strong-willed individuals are heading from the
cold of Minnesota to the warmer and more agreeable riding weather of
Arkansas & Missouri. Never been there, it seems like a good spring riding
opportunity. We're heading down in a few weeks.
We pretty much deserve each other. Crabby middle aged riders of
lower-than-average off-road riding skill found each other because nobody
else will put up with us anymore. Mostly we ride the interesting gravel
roads and goat paths, with an occasional excursion into ORV areas. We like
to make sure that there's a decent restaurant nearby at the end of the day.
We camp, though (cheap).
Two of the knotheads say that the best riding is in Missouri, in the Mark
Twain National Forest. The most intellegent knothead says that the Ouachita
National Forest in Arkansas is the place to be.
This is going to get decided next weekend during the annual ride planning
event. So, what's the advice of those folks who are familiar with these
places? Am I missing some other great MO/AR riding opportunities?
